Almond Butter Energy Bites


I introduce to you, Almond butter energy bites. These little bites of glory are addicting! They are packed with protein and gluten free goodness. (Also they can be easily made vegan). This simple recipe is easy to whip up in 15 minutes and can be stored in the refrigerator for up to a week. They are the best go to snacks to pop in your mouth when you’re in a hurry and I promise you they’ll satisfy that sweet tooth without the guilt. Now whip these babies up and enjoy!

Almond butter energy bites


Ingredients:

  • 2 cups GF rolled oats

  • 5 pitted dates

  • 2 tsp. pure vanilla extract

  • ½ tsp. cinnamon

  • 1 tbs. shredded coconut (optional)

  • 2 tbs. almond milk

  • 2 tbs. raw unfiltered honey (switch out for maple syrup if Vegan)

  • 1/3 cup creamy almond butter

  • 1 cup “enjoy life” dark chocolate chips

Directions:

Combine all ingredients (except chocolate chips) in a large food processor and blend on medium low for one minute. Then blend for one more additional minute on high speed. Remove lid (be careful of blade) and with a rubber spatula empty mixture into a separate bowl. Fold chocolate chips in with mixture until well combined. Next, take a table spoon and scoop out a heaping scoop of batter and roll into small 2-3 inch balls. Store in an airtight container and refrigerate for up to a week.
